Préchauffer le four à 350 ° F.

Lorsque vous écrasez la chair de patate douce (avec un robot culinaire ou un batteur à main), assurez-vous qu’elle est lisse et sans grumeaux.

Mélangez le sucre, le lait, les œufs, le sel, le gingembre et le zeste d’orange dans la patate douce cuite. (Voir les conseils sur la cuisson de la patate douce dans l’intro ci-dessus.)

Transformez-les en coquille de pâtisserie non cuite (ou précuite). Cuire la tarte au four pendant 1 heure ou jusqu’à ce qu’un couteau inséré au centre en ressorte propre. Le remplissage doit être légèrement gonflé. Si la croûte devient trop foncée avant que la tarte ne soit cuite, couvrez-la légèrement de papier d’aluminium.

Idéalement, laissez la tarte refroidir une heure pour que la garniture soit ferme et prise.

Si désiré, servir avec de la crème glacée ou de la crème fouettée. Ou, notre préféré est 1 tasse de crème épaisse fouettée avec ¼ tasse de brandy.
