Faire fondre le beurre dans une casserole épaisse. Ajouter le sucre, le lait et le chocolat, et remuer constamment jusqu'à ce que le chocolat soit fondu. Faire bouillir pendant 13 minutes à feu mi-doux, en remuant de temps en temps.

Retirer du feu et ajouter la vanille (et les noix ou le beurre d'arachide) et battre jusqu'à consistance crémeuse. Travaille vite. Verser immédiatement dans un moule beurré, laisser refroidir légèrement et marquer en carrés.

Facultatif: Ajoutez du sucre candi sur le dessus avant de laisser le fudge refroidir complètement.
